Ingredients
4 medium russet potatoes
2 tablespoons olive oil
1 cup Francesco Rinaldi Marina Sauce
1 1/2 cups shredded low-moisture part-skim mozzarella cheese
4 pepperoni, each cut into 6 wedges
1/4 cup thinly sliced green bell pepper
1/2 tablespoon sliced black olives
Ranch dressing for serving (optional)
Directions

1. Preheat oven to 400°; line rimmed baking pan with parchment paper and spray with cooking spray. Cut potatoes lengthwise in half; place, cut side down, on prepared pan. Bake potatoes 45 minutes or until tender; cool slightly.

 

2. When potatoes are cool enough to handle, with spoon, leaving 1/2-inch wall, scoop out inside portion of each potato half (reserve for another use). Return potato halves, skin side down, to same pan; brush both sides with oil and bake 15 minutes

 

3. Top potato skins with pizza sauce and cheese; arrange pepperoni, pepper and olives over cheese to create desired jack-o-lantern faces. Bake potato skins 15 minutes or until heated through and cheese melts. Makes 8 potato skins

 

4. Serve potato skins with dressing, if desired
